How can I control a programmable "set-back" thermostat via the iRemote-Mod?

NOTE:  This pertains to Control Panels GEM-P1632 / GEM-P1664 v10 or greater, GEM-P3200 / GEM-P9600 v30 or greater, and GEM-X255 v4 or greater; and explains how to configure Area1 to control a set-back thermostat via the iRemote.
